The humans didn't have destructible walls for too much longer. It was just a matter of waiting for the animations for the next race of walls to implement them in - so they were added one-at-a-time but relatively consecutively.
And destroying walls usually isn't the best strategy unless you have a bunch of ranged siege. Walls are strong and your units are very vulnerable while you try to breach them. A better strategy is often to create some sort of diversion, rush in some siege ladders, and claim a segment of the wall as fast as possible from which you can take down the enemy archers and open the gates from the inside for the rest of your army.
